Description

A quick, easy and delicious cherry cheesecake with a graham cracker crust. Perfect for parties or dessert.

Ingredients

  • FOR THE CRUST:
  • 1-¼ cup Graham Cracker Crumbs
  • 3 Tablespoons Sugar
  • ⅓ cups Butter, Melted
  • _____
  • FOR THE CHEESECAKE:
  • 16 ounces, weight Cream Cheese
  • ½ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 can (about 20 Oz. Can) Cherry Topping

Preparation

Preheat oven to 350 degrees. Line 1 1/2 muffin tins (18 spaces) with cupcake liners.

Mix graham crackers, sugar and melted butter. Press a spoonful into each cupcake liner and press firmly to the bottom, more or less depending on how thick you want the crust.

Beat cream cheese, sugar, eggs, and vanilla until thick and creamy. Spoon mixture onto graham cracker crust, filling 3/4 full. Bake for 15 minutes or until a toothpick inserted comes out mostly clean (some dry crumbs sticking to it is okay). The tops will round out and crack and that’s when you’ll know they are done.

Let them cool, then add cherry filling to top, or any other fruit filling you prefer. These are best served cold.

Thank you so much for this recipe. I whipped these up for a cherry themed party and they were 1. DELISH, 2. EASY and 3. FAST! Thank you so much for sharing. In the future I may toss a little lemon zest in the cheesecake batter, but it really doesn’t need it. These are yum the way they are!

these are DELISH! the recipe is so simple came together quickly and were the perfect little bite for my guests.

only problem is that as i’m writing this review i ate 6 of the leftovers. oooops. great recipe, thanks for sharing.

These are super easy, delicious, and the perfect little bith for parties and gatherings. I added some lemon zest to my batter for a little something extra, and think I’ll continue to do that.
