Description

Simply delicious mini baked doughnuts with flavourful coffee glaze and dark chocolate.

Ingredients

  • FOR THE DOUGHNUTS:
  • 150 grams Plain White Flour
  • 1 teaspoon Baking Powder
  • 100 grams Caster Sugar
  • ½ teaspoons Salt
  • 120 milliliters Milk
  • 20 grams Unsalted Butter, melted
  • 2  Eggs
  • ½ teaspoons Vanilla Extract
  • FOR THE GLAZE:
  • 125 grams Icing Sugar
  • 3 Tablespoons Strong Coffee
  • FOR DECORATING:
  • 100 grams Dark Chocolate

Preparation

Preheat oven to 160ºC (320ºF). Lightly brush doughnut pan with oil.

In a medium bowl, mix flour, baking powder, sugar and salt. In a separate bowl, whisk milk, melted butter, eggs and vanilla extract.

Make a well in dry ingredients and pour in liquid. Mix to form batter.

Pour batter in a piping bag and fill each doughnut hole ¾ full. Alternatively, just carefully spoon mixture in holes.

Bake approximately 10 minutes or until light golden. Leave to cool in pan for a few minutes and then transfer to a cooling rack.

To prepare glaze, sift icing sugar into a bowl and add strong coffee. Mix until smooth and glossy. Dip completely cooled doughnuts into glaze and transfer back onto rack to let icing set.

When icing is set, melt chocolate by microwaving in 30-second intervals (stirring after each interval) until chocolate has melted completely. Pour into piping bag and decorate doughnuts as desired.
