Description

This rich dessert will have you asking for seconds. Simple and easy, and oh so good. Crust made from chopped pecans, and a topping using cream cheese … what’s not to love?

Ingredients

  • FOR THE CAKE:
  • 2 whole Eggs
  • 1 cup Butter (2 Sticks)
  • 1 can (14 Oz. Can) Sweetened Condensed Milk
  • 1 cup Pecans, Finely Chopped
  • 1 Tablespoon Vanilla Extract
  • _____
  • FOR THE TOPPING:
  • 1 package (8 Oz.) Cream Cheese, Softened
  • 1 cup Confectioners Sugar
  • 1 teaspoon Vanilla

Preparation

To make the cake, blend together the eggs, butter, condensed milk, pecans, and vanilla. Pour into a greased 8×8 inch pan, or bread pan. Bake at 350°F for about 30 minutes or until an inserted toothpick comes out clean. Let cool completely.

Mix together the topping ingredients and spread on top of the cooled cake.

Keep refrigerated.

Yes, it’s so yummy! I was first introduced to this deliciousness by Maria, a foreign exchange student from Mexico. It can be a great elegant dessert depending on how it’s presented.
