Description

Cookie bars made with Mexican chocolate chunks, whole wheat pastry flour, oats, walnuts and agave!

Ingredients

  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Butter, Melted
  • ½ cups Agave Nectar
  • ½ cups Whole Wheat Pastry Flour
  • ¾ cups Quick Cooking Oats
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Cinnamon
  • 3 ounces, weight Mexican Chocolate (such As Ibarra), Coarsely Chopped
  • ½ cups Walnuts, Chopped

Preparation

Preheat the oven to 350 F.

In the bowl of your stand mixer, combine egg, vanilla extract, butter and agave. Mix well until combined.

In a separate bowl, mix the wheat flour, oats, salt, baking soda and cinnamon. Sift or stir to combine. Pour the flour/oat mixture into the wet mixture and stir just until flour is integrated. Add the chopped walnuts and chocolate chunks and fold into the dough.

Pour the dough into a lightly oiled bread loaf pan (a 10” x 5” bread pan works perfectly). Spread until dough is evenly dispersed on bottom of the pan. Bake for 20 minutes or until the sides begin to turn golden brown and the center tests clean.
