Description

I keep trying to make the perfect key lime pie. This one is my favorite so far but next time I plan to have limes for garnish and time to make a crust.

Ingredients

  • 4 whole Egg Yolks
  • 14 ounces, fluid Sweetened, Condensed Milk
  • ½ cups Fresh Lime Juice
  • 2 teaspoons Lime Zest
  • 1 whole Graham Cracker Pie Crust
  • 1 cup Whipping Cream
  • ¼ cups Sugar

Preparation

Preheat oven to 350ºF.

In a large bowl, beat the egg yolks for 1 minute. Add sweetened condensed milk and 1/4 cup of the lime juice. Whisk until blended. Add remaining lime juice and all of the lime zest. Mix together. Pour into pie crust.

Bake for 12 minutes. Let pie cool completely.

Mix whipping cream and sugar until fluffy. Spread over pie.

Um…one word…AMAZING. This was so easy to make, and is so light and creamy. I added lime zest to the whipped cream and used the whole 2 tsp of zest for the pie, because we like lime, and it still wasn’t too strong. This was the first key lime pie I’ve actually made, and it is every bit as good as some restaurant pies I’ve tasted. Thanks for sharing, and thanks to Megan for the inspiration! :)
