Description

When I was child, we would drive from Atlanta, GA to Nowata, OK to visit our grandmother. She always made these cookies and they have been my favorite ever since. I don’t know who Mary Lee was but the cookies are so sweet and chewy—really delicious.

Ingredients

  • 1 cup Butter, Softened
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2  Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 2 cups Old Fashioned Oats
  • 2 cups Rice Krispies, Or Other Crisped Rice Cereal
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 cup Flaked Coconut

Preparation

Preheat oven to 450ºF.

Cream the butter and both sugars until light and fluffy. Add the eggs and blend, then add vanilla and mix well.

In a separate bowl, combine flour, oats, Rice Krispies, baking soda and baking powder. Slowly add to the butter/sugar mixture, mixing until combined well. Fold in coconut.

Drop dough by teaspoonfuls on a parchment-lined baking pan, about 2 inches apart (cookies will spread while baking). Bake for approximately 8-9 minutes, or until golden brown. Cool on wire rack.

These cookies sound great. But, what caught my eye was the Nowata,OK. I was born in Nowata. And live just 15 mins south of there in a little town called Talala. I will be trying these cookies!!
