Description

The icing in these whoopie pies is made with marshmallows and is the perfect pairing with the light chocolate cookies!

Ingredients

  • 1 cup Butter, Softened
  • 1-½ cup Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 4 cups All-purpose Flour
  • ¾ cups Baking Cocoa
  • 2 teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Water
  • 1 cup Plain Greek Yogurt

  • FOR THE FILLING:
  • 2 cups Marshmallow Creme
  • 2 cups Confectioners Sugar
  • ½ cups Butter, Softened
  • 2 teaspoons Vanilla Extract

Preparation

Preheat oven to 375°F.

In a large mixing bowl, cream butter and sugar until light and fluffy. Add the eggs and vanilla; mix well. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with water and yogurt, beating well after each addition.

Drop by teaspoonfuls 2 inches apart onto greased baking sheets. Bake for 5–7 minutes or until set. Remove to wire racks to cool completely.

For the filling: In a small mixing bowl, beat filling ingredients until fluffy. Spread filling on the bottom of half of the cookies; top with remaining cookies.

Made this as a family treat one night, everyone loved it. I didn’t try the filling because I was in a rush & ended up using frosting. Also, I will say that the cookie/ cake batter is highly addictive, as I could’ve just drank it by itself! Easy, yummy recipe.
