Description

Chocolate cookies with gooey marshmallow centers. Yes, please!

Ingredients

  • 3 cups Flour
  • ⅔ cups Cocoa
  • ½ teaspoons Baking Soda
  • 1 cup Granulated Sugar
  • 1 cup Packed Light Brown Sugar
  • 1 cup Butter, Softened
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 12 ounces, weight Semi-Sweet Chocolate Chips
  • 8 ounces, weight Mini-marshmallows (frozen)

Preparation

Preheat oven to 350ºF. In a medium bowl combine flour, cocoa, and baking soda; set aside. In a large bowl, combine sugars and butter. Add eggs and vanilla and beat until light and fluffy. Add the flour mixture and chocolate chips, blend until combined. The dough will be stiff.

Gather 4 or 5 frozen marshmallows and wrap a heaping tablespoon of dough around them, forming a ball. Feel free to start with a large amount of dough and reduce it as needed. You need only enough to completely hide the marshmallows inside.

Place cookies on ungreased baking sheets, about 2″ apart; the cookies will spread. Bake 10-12 minutes. Cool the cookies 2 minutes on the the baking sheet, then remove to a cooling rack.
