Description

Chocolate brownies (not dark chocolate, though), covered with marshmallows and drizzled with a chocolate sauce (which also makes a great ice cream sauce!).

Ingredients

  • Miniature Marshmallows
  • FOR THE BROWNIES:
  • ¾ cups Shortening
  • 1-⅓ cup Sugar
  • 3 whole Eggs
  • 1-⅓ cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • 2 Tablespoons Cocoa
  • ⅓ teaspoons Salt
  • 1-½ teaspoon Vanilla
  • FOR THE ICING:
  • ¾ cups Brown Sugar
  • ⅓ cups Water
  • 3 Tablespoons Cocoa
  • 4 Tablespoons Butter
  • 1-½ teaspoon Vanilla
  • 2 cups Powdered Sugar

Preparation

Mix the brownie ingredients (shortening, sugar, eggs, flour, baking powder, cocoa, salt and vanilla) in the order given. Bake at 350F for 20 minutes.
Take it out of the oven and cover with miniature marshmallows. They’ll get puffy, so they don’t have to touch each other, although you do want the brownie covered. Put it back in the oven for 3 minutes.

For the icing, mix the brown sugar, water, cocoa, butter, and vanilla in a saucepan. Boil for 3 minutes. Let cool, then add the powdered sugar.

Drizzle chocolate icing over the top of the marshmallows. I drizzle it so you can still see the white of the marshmallows here and there, not just an entire covering of chocolate. There’s usually enough extra to use on ice cream. :)

I made the brownie part of this recipe and it was amazing! Everyone liked the texture (not too fudgy, not too cakey) and we agreed that the amount of chocolate was perfect, not too overpowering!

The final result of this recipe is excellent! The brownies were very light which worked well with the gooey marshmellows. My only problem was that I followed the recipe exactly for the “frosting” and it was so thick – it was NOT drizzable. :( SO, I added about a tablespoon of heavy cream and it worked perfectly. Not sure what I did “wrong”, but the end result was yummy!! My son loved these!! Thanks!!
