Quick and easy recipe makes a lot of delicious doughnut holes.
Combine sugar, eggs, melted shortening and vanilla in a large mixing bowl. Sift flour, baking powder, soda, salt and nutmeg together in a medium mixing bowl. Add the dry ingredients to the sugar mixture alternately with the buttermilk. Mix well. Heat oil, about 4 inches, in a heavy saucepan or Dutch oven (I prefer cast iron) to about 370 degrees. Drop batter by scant teaspoonfuls into the hot oil and fry until golden brown, turning once. Drain on paper towels and roll in cinnamon-sugar mixture. Makes about 4 dozen holes.
Note: if oil is too hot, doughnuts will brown too quickly and be undercooked in the center.
