Description

A pecan smack in the face … and it’s a good thing.

Ingredients

  • FOR THE CRUST:
  • 1-⅓ cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • ⅓ cups Butter, Softened
  • ½ cups Brown Sugar (preferably Dark), Firmly Packed
  • ½ cups Pecans, Toasted And Finely Chopped

  • FOR THE TOPPING:
  • 2 whole Eggs
  • ¾ cups Pure Maple Syrup
  • ¼ cups Brown Sugar (preferably Dark), Firmly Packed
  • 3 Tablespoons All-purpose Flour
  • 1-½ teaspoon Maple Extract
  • 1 teaspoon Kosher Salt
  • 1 cup Pecans, Toasted (halved Or Whole)

Preparation

Preheat the oven to 350ºF. Butter a 9 x 13 inch pan.

For the crust, sift together the flour and baking powder. In a separate bowl beat together the butter and brown sugar. Add the flour mix and combine until it is like fine sand. Use your hands to get it all together. Mix in the pecans. Press into the bottom of the pan. Bake for 8 minutes. It continues to bake after, don’t worry.

While the crust bakes, whisk the eggs until foamy. Add the maple syrup, brown sugar, flour, maple extract and salt until combined. Stir in the pecans. Pour over the hot crust. Bake for 25 minutes, it will set once it is completely cooled.

Note: If you prefer to have a milder maple flavour, use vanilla extract. I’ve tried maple and vanilla and they were equally awesome.
