Description

My favorite summer produce comes together to make one tasty cupcake.

Ingredients

  • FOR THE CUPCAKES:
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ⅛ teaspoons Salt
  • ¼ cups Butter, Softened
  • ⅓ cups Granulated Sugar
  • 2 whole Eggs
  • ⅓ cups Milk
  • 1 teaspoon Lime Zest
  • ½ cups Finely Chopped Mango
  • FOR THE FROSTING:
  • ½ cups Butter, Softened
  • 2 Tablespoons Fresh Lime Juice
  • 2 cups Powdered Sugar
  • 1 teaspoon Lime Zest, For Garnish

Preparation

For the cupcakes:
Heat oven to 350ºF (175ºC). Line a muffin/cupcake try with cupcake liners.

In a small bowl, mix together the flour, baking powder and salt.

In a stand mixer, cream together the butter and sugar on a medium high speed until light and fluffy. Add the eggs, one at a time, until fully incorporated.

With the mixer on the lowest speed, alternately add in the flour mixture and milk, mixing until just combined. Stir in the lime zest and chopped mango. Pour evenly into baking cups.

Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack before frosting.

For the frosting:
While the cupcakes are cooling, in the bowl of a standing mixer, beat butter until it is light and fluffy.

Gradually add the lime juice, followed by the powdered sugar, until the frosting reaches the desired consistency.

Frost the cupcakes using a star tip and garnish with fresh lime zest.
