Description

Really easy pound-cake type recipe my mother always made when I was growing up. The cake originally called for vanilla flavoring only and it was delicious! I add coconut also because I’m a coconut freak.

Ingredients

  • 1 cup Milk (I Use Skim)
  • ½ cups Butter (I Use Margarine)
  • 4 whole Eggs
  • 2 cups Sugar
  • 2 cups All-purpose Flour
  • ½ teaspoons Vanilla
  • 1 teaspoon Coconut Extract
  • 1 teaspoon Baking Powder

Preparation

Put milk and butter in a sauce pan and let it come to a boil on medium to medium-ow heat.

Meanwhile, beat eggs well. Beat in the sugar, then add flour and beat well. After milk and butter come to a boil, pour immediately over batter and beat together. Be careful and start slowly, since the milk and butter are very hot.

After beating in the milk/butter, add vanilla and coconut flavoring and the baking powder. Beat well, then pour into greased and floured tube pan. Bake 45 to 50 minutes at 350F.

Don’t bake this too long. My oven takes 47 minutes.
