Description

Made with wholesome, nutritious ingredients and zero refined sugar, these energy bars are gluten-free and dairy-free.

Ingredients

  • 1 cup Almond Flour
  • ½ cups Pumpkin Seeds, Unsalted
  • ½ cups Sunflower Seeds (unsalted)
  • 2 Tablespoons Chia Seeds
  • ½ cups Flaxseeds, Ground
  • 2 Tablespoons Maca Powder
  • ½ teaspoons Sea Salt
  • ½ Tablespoons Cinnamon
  • ¼ cups Coconut Oil
  • ¼ cups Raw Honey
  • ⅓ cups Natural Peanut Butter, Unsalted
  • ¼ cups Shredded Coconut (unsweetened)
  • ¼ cups Goji Berries

Preparation

In a large bowl, mix together almond flour, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds, maca powder, sea salt and cinnamon.

In a small saucepan, heat coconut oil, honey and peanut butter until melted and smooth. Pour peanut butter mixture into dry ingredients. Stir to combine.

Add the shredded coconut and goji berries. Mix.

In an 8×8 dish that has been lined with parchment paper, press in the bar dough. Place in the freezer to set for 45 minutes. Remove the bars from the freezer and cut into either 8 bars or smaller squares.

Store in the refrigerator until ready to eat.
