Description

The perfect taste of fall! A rich, moist cake with an amazing flavor. My dear friend in Canada gave me this recipe, and I’ve passed it on to so many people already!

Ingredients

  • FOR THE CAKE:
  • 4 cups Diced Apples
  • 2 cups White Sugar
  • ½ cups Vegetable Oil
  • 1 cup Chopped Walnuts Or Pecan (optional)
  • 2  Eggs, Lightly Beaten
  • 2 teaspoons Vanilla Extract
  • 2 cups All-purpose Flour
  • 2 teaspoons Cinnamon
  • 2 teaspoons Baking Soda
  • ½ teaspoons Salt
  • FOR THE FROSTING:
  • 1 package (8 Oz. Package) Cream Cheese, Softened
  • ½ teaspoons Vanilla Extract
  • 3 Tablespoons Milk
  • 1 Tablespoon Margarine, Softened
  • 2 cups Powdered Sugar

Preparation

Preheat oven to 350 F.

In a large bowl mix together apples, sugar, oil, nuts, eggs, and vanilla. In a medium-sized bowl sift together the flour, cinnamon, soda and salt then add it into the apple mixture. It will seem like it’s not going to make much of a batter, but it does. It just takes a minute! Pour batter into a greased (sprayed with cooking spray) 9″x13″ baking pan and bake at 350 F for 45 to 60 minutes. Remove from the oven and allow it to cool.

To prepare the frosting, beat cream cheese in a medium sized bow until light and slightly fluffy. Add the other frosting ingredients and beat until smooth. Spread it onto the cooled cake.
