Description

St Patrick’s Day cupcakes!

Ingredients

  • 1 box (18 Oz. Box) Yellow Cake Mix
  • 4 whole Eggs
  • ½ cups Water
  • ½ cups Vegetable Oil
  • 1 box (small 4-serving 3.4 Oz. Box) Instant Vanilla Puddin Mix
  • ½ cups Plain Yogurt Or Sour Cream
  • Green Decorating Paste
  • _____
  • FOR THE FROSTING:
  • 8 ounces, weight Softened Cream Cheese
  • 1 stick Softened Butter
  • 1 pound Powdered Sugar
  • Yellow Decorating Paste Or Food Coloring
  • Any Sprinkles Of Choice

Preparation

1. Preheat oven to 350 degrees F. In a stand or electric mixer, add cake mix, eggs, water, oil, pudding, and yogurt. Beat on medium speed for 1 1/2 minutes. Slowly beat in 5-8 drops of green decorating paste until you get the desired color of green. Scoop batter into paper-lined mini cupcake tins. Bake for 15-18 minutes or until cooked through. Let cool completely.

2. To prepare the frosting, beat cream cheese and butter until creamy. Slowly add powdered sugar until creamy and thick. Divide frosting into 2 bowls then add in a few drops of yellow food coloring or decorating paste into one.

3. Frost cupcakes and sprinkle with gold pearl dust or sprinkles if desired.

Makes 36 mini cupcakes.

I made this for my co-workers last week and they loved them! Many did complain about eating 6 in a day, maybe next time I will try the regular size ones too. One thing to note, if you want to make these blue, make sure you don’t use yellow cake mix… always end up with green… oops! Agreed, Mowsquaz, I had 48 very full mini cupcakes when I was finished as well.

I made these to share at work yesterday and received great reviews. I had to make full size cupcakes (24) as the girls don’t like mini cakes…they feel like they are eating too much to eat more than one! Thanks for sharing!

I made these this weekend to take to my son’s class on St. Patrick’s Day, and my husband tasted one and said it didn’t even need frosting, it was so good. They really are delicious! Thanks for the recipe!
Oh, also, for me it made way more than 36. It made 48 mini cupcakes plus 4 regular-size cupcakes!

I made these to take to my son’s class on St. Patrick’s Day, and my husband tasted one and said it didn’t even need frosting, it was so good. They really are delicious! Thanks for the recipe!
Also, for me it made way more than 36. It made 48 mini cupcakes plus 4 regular-size cupcakes!
