A healthier way to enjoy the holiday tastes of orange and cranberry.
In a large bowl, mix together the flour, artificial sweetener, salt, baking soda, baking powder and 3 tablespoons of sugar. Cut in the butter with a pastry cutter or fork until the mixture resembles coarse crumbs. In a separate bowl, mix together the egg, orange juice, milk and vanilla and combine with the dry mixture. Fold in the cranberries and pour the batter into either a nonstick loaf pan or one that’s been sprayed with a nonstick spray such as Pam.
Sprinkle the remaining tablespoon of sugar over the top and bake in a preheated 350ºF oven for 1 hour. Allow to cool slightly before slicing and serve warm.
