Description

Sorry for this pic! I forgot to take it first. Needless to say, this was much loved by my family.

Use any fruit you like to make this lower fat version of a cobber or dump cake. My hubby couldn’t tell the difference.

Ingredients

  • 3 cups Fruit Of Choice (Blackberries For Us)
  • 1 box (16 Oz. Size) Angel Food Cake Mix
  • 1 cup Water

Preparation

Preheat oven to 350ºF.

I baked a small dump cake in a loaf pan. Of course, you can go smaller or larger if you prefer.

Spray pan with non-stick spray. Put enough fruit in to cover the bottom of the pan well. If using a berry, squish them up a little to release some juice. (I used a potato masher.)

Cover fruit with dry angel food cake mix. If making a smaller dump cake, you might not use the whole package. We used about 1/3 of a box for our loaf pan-sized cake.

Slowly pour water over the layer of dry cake mix. Just using enough to cover the dry mix. I like to sprinkle it with cinnamon for some spice, but that’s totally optional.

Bake at 350ºF for 30–50 minutes depending on the size of your cake. Use a toothpick to stick in, and if it comes out clean of cake mix, it’s ready. The toothpick will have some berry/fruit juice, of course.

Does it need to be Angel Food cake in order to use the water or have you tried GF yellow cake mix?
