Description

These are delicious alternative to the original oatmeal no bake cookie. You don’t have to be eating a low carb diet to enjoy these, they are fantastic!

Ingredients

  • 4 Tablespoons Coconut Oil Or Melted Unsalted Butter
  • ½ cups Natural Peanut Butter
  • 6 Tablespoons Unsweetened Cocoa Powder
  • 6 Tablespoons Splenda (granular) Or Another Granular Sweetener
  • ½ teaspoons Vanilla Extract
  • ½ cups Finely Shredded Unsweetened Coconut
  • ½ cups Pecans, Chopped

Preparation

Mix together the coconut oil, peanut butter, cocoa powder until the cocoa powder is fully incorporated.

Add the splenda and vanilla.

Next incorporate the coconut and pecans.

Use a spoon to drop cookies onto a wax paper-lined baking sheet. Chill until set.

I make small cookies with these. If you like them small like I do, you will get approximately 18 cookies. If you like them larger, by all means make them larger, it will just increase the setting time.

Oh my goodness! These are just the little fat bombs I’ve sought. Thanks! I made 18 cookies but somehow 2 jumped into my mouth before they even made it to the freezer. Delicious!

These are very good and easy to make. My 2 year old grand daughter helped me with them. We had to use flaked toasted coconut and refined oil, as it was what I had on hand. They are crunchy and just the right sweetness! Thanks for the recipe.

This has everything I love, simple ingredients, fast to make, and absolutely Divine results!
My worst Cravings that I can’t satisfy are for cookies or cake. The low carb cookies I’ve made have been interesting but nothing tastes as authentic as these no bake cookies. I omitted pecans because I do not like them and the results are still perfection!

Delicious and just what a low carbing, chocolate and peanut butter loving person might need!

These were simple and quick to make and definitely tended to my craving for chocolate.

I didn’t have pecans on hand so I used unsalted roasted peanuts and slivered almonds and the crunch is perfect.

I follow a ketogenic diet and these are amazing!!!!! Only one net carb. Easy to make, keep in the fridge as the coconut oil gets soft fast!! They are delist!! I cut the stuvia (imitation sugar in 1/2)

If the total carbs are 7g and the dietary fiber is 6g then these have only 1g net carb each; woot!
