Description

Light, fluffy sugar cookies with an amazing frosting. Yum. Makes an extra large batch of cookies!

Ingredients

  • FOR THE COOKIES:
  • 2 cups Butter, Softened
  • 2-⅓ cups Sugar
  • 4 whole Eggs
  • 1 whole Vanilla Bean, Scraped
  • 1 cup Milk (I Use Skim)
  • 8 cups Flour (plus More For Countertop)
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 whole Lemon, Zested
  • ½ teaspoons Salt
  • ¼ teaspoons Nutmeg
  • 1-½ Tablespoon Light Corn Syrup
  • FOR THE FROSTING:
  • ½ cups Butter, Softened
  • 5 cups Powdered Sugar
  • 2 Tablespoons Light Corn Syrup
  • ¼ cups Milk

Preparation

For the cookies, cream butter and sugar. Add eggs, vanilla and milk. Stir in remaining ingredients (it may take a few minutes to incorporate everything). Dough will be very sticky and soft. Place on a well-floured surface (dusted with about 1 cup flour), and knead flour into a dough until pliable. Roll out to about ⅓ inch thick. Cut into shapes and place on cookie sheets.

Bake in a 325ºF oven for about 10 minutes. Cool and frost.

For the frosting, beat butter with powdered sugar, corn syrup and milk. Add more milk if necessary to get to desired consistency. I have to double this frosting recipe for the sugar cookie recipe above. Enjoy!
