Description

The little chicks are perfect for Easter or a spring get-together!

Ingredients

  • FOR THE SUGAR COOKIES:
  • 1 cup Butter
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • ½ teaspoons Almond Extract
  • 1  Egg
  • 2-⅓ cups Flour
  • ½ teaspoons Baking Soda
  • FOR THE FROSTING:
  • 1-½ cup Unsalted Butter, Room Temperature
  • 1 pound Confectioners Sugar
  • ½ teaspoons Vanilla Extract
  • Assorted Candies And Decorating Gel

Preparation

For the sugar cookies:

Preheat oven to 375ºF.

Beat together butter and sugar on low speed until fluffy. Stir in vanilla extract, almond extract, and the egg. Mix well.

Stir in flour and baking soda.

Drop heaping tablespoonfuls onto a foil-lined baking sheet about 2 inches apart. Bake 9-11 minutes until just set. Remove to a cooling rack and cool completely before decorating.

For the frosting:

Beat butter on medium-high speed until pale and creamy. Reduce speed to medium. Add confectioner’s sugar 1/2 cup at a time, beating well after each addition.

Add vanilla (and food coloring, if using any) and beat until frosting is smooth. I used yellow food coloring, about 20 drops to get a slight yellow tint to my little chick.

Generously frost cookies and decorate! I used black gel icing for the eyes, yellow decorating icing for the feathers, and orange slice candies cut up for the beak and feet.
