Description

Lime Pound Cake is a moist, delicious and not overly sweet dessert idea.

Ingredients

  • 2 cups All-purpose Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ¾ cups Butter
  • 1-¼ cup Sugar
  • 4 whole Eggs
  • 1 Tablespoon Lime Zest
  • 1 teaspoon Vanilla
  • ½ cups Plain Greek Yogurt
  • ¼ cups Fresh Lime Juice
  • ½ cups Powdered Sugar, Divided

Preparation

Heat oven to 325ºF. Grease and flour a 10-inch bundt pan.

In a medium bowl, combine flour, baking powder and baking soda.

In a large bowl, beat butter with sugar on low speed until well-blended. Increase to high speed and beat until light, about 3–4 minutes. Add eggs, one at a time, beating well after each addition. Beat in lime zest and vanilla.

On low speed, alternately beat in flour and Greek yogurt.

Spoon batter into prepared pan and bake about 30–35 minutes or until toothpick inserted near center comes out clean.

With a knife, loosen cake from sides of pan. Cool in pan on rack for 10 minutes. Remove cake from pan by quickly inverting pan on serving plate.

For the lime glaze, mix lime juice with 1/4 cup powdered sugar. Whisk together and brush over top of warm cake. Sift remaining powdered sugar over top of cake.
