Description

These cookies will cool you off on a hot day. The combination of lime and cream cheese makes them perfect for the summer months. The short-bread cookie texture is soft and chewy. They remind me of individual servings of Key Lime Cheesecake…yum!

Ingredients

  • FOR THE COOKIES:
  • 2-¼ cups All-purpose Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ¾ cups Granulated Sugar
  • 2 Tablespoons Zest Of Lime
  • 2 sticks Unsalted Butter, Room Temperature
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • FOR THE FROSTING:
  • 4 ounces, weight Cream Cheese, Softened
  • 1 cup Powdered Sugar
  • 2 Tablespoons Lime Juice

Preparation

Preheat the oven to 350°F and line two baking sheets with parchment paper or silicone baking mats. Set aside. Note: If you do not have parchment paper or a silicone baking mat, place the dough directly on an ungreased cookie sheet.

In a medium bowl, combine flour, baking powder and salt. Set aside.

In a small bowl, combine granulated sugar and lime zest. Rub the sugar and zest together with your hands to combine.

Beat butter and sugar/zest mixture together until light and fluffy. Beat in egg and vanilla until well combined.

Slowly beat in the flour mixture on low speed until blended. Dough will be thick.

Drop dough by rounded tablespoons onto baking sheets, spacing 2 inches apart. Gently flatten dough with the palm of your hand.

Bake for 11-13 minutes or until cookies are just set. Cool cookies on baking sheet for 2-3 minutes before transferring to wire racks. Cool completely.

To make the frosting, add the cream cheese and powdered sugar to a medium bowl and beat until smooth. Add the lime juice and combine well.

When cookies are cool, use a knife to ice. Let icing dry before packaging. You will want to share!
