Description

Beating Pepperidge Farm at their own game with these copycat cookies!

Ingredients

  • 2 cups Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Butter, Cubed
  • 1 cup Brown Sugar
  • ½ cups Sugar
  • 2 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 2 cups Chocolate Chips
  • 1 cup Toffee Bits
  • 1 cup Almonds, Chopped

Preparation

Preheat oven to 300 F.

In a medium bowl, whisk together flour, baking soda and salt. Set aside.

In the bowl of a stand mixer, beat together butter, brown sugar and sugar until light and fluffy. Add in eggs, one at a time and mix in between additions. Mix in the vanilla.

With the mixer on low, add 1/2 cup of flour mixture into the batter a time. Once it’s all been added in, pour in chocolate chips, toffee bits and almonds. Mix until just combined.

Spoon dough onto a parchment paper lined baking sheet, spacing dough balls about 2″ apart. Bake for 21-22 minutes. Remove pan from oven and set on a wire rack for a minute. Then remove cookies from baking sheet and cool on a wire rack. Devour.
