Description

This delicious summery cake is perfect for a backyard barbecue or summer pool party. There is NO sugar added to this recipe due to the lemonade concentrate already being sweetened!

Ingredients

  • FOR THE CAKE:
  • ⅓ cups Butter, Softened
  • 1-⅓ cup Sugar
  • 3  Eggs
  • 1-⅓ cup Frozen Lemonade Concentrate, Thawed
  • 1 teaspoon Vanilla
  • 2-¼ cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1-¼ cup Buttermilk
  • FOR THE FROSTING:
  • ⅓ cups Butter, Softened
  • 2 cups Powdered Sugar
  • ½ cups Frozen Lemonade Concentrate, Thawed
  • 1 teaspoon Vanilla

Preparation

Preheat oven to 350 degrees.

FOR THE CAKE:

In a large bowl beat butter and sugar together. Add eggs one at a time. Add lemonade concentrate and vanilla. Set aside.

Mix flour, baking powder, baking soda, and salt in a small bowl.

Add 1/3 of the flour mixture into the creamed mixture. Add 1/2 of the buttermilk. Repeat until all of the buttermilk and flour has been incorporated.

Pour into a 9×13 that has been coated with cooking spray. Bake for 30 to 35 minutes. Remove from the oven and allow cake to cool to warm or room temperature.

FOR THE FROSTING:

Meanwhile, in a medium sized bowl beat the butter until smooth. Add 1 cup of sugar. Add in 1/2 cup of the lemonade concentrate and vanilla. Gradually add the rest of the powdered sugar until desired consistency forms. Spread over warm cake. Enjoy!

puzzled—in your description it says that no sugar has been added to the recipe since the lemonade is sweetened, but both the cake and the icing have sugar added. wondering if there is an error in the recipe?
