Description

My Grandma’s recipe. These are the best thing to do with zucchini EVER!

Ingredients

  • ¾ cups Butter
  • ¾ cups Sugar
  • 1 whole Egg
  • 1 teaspoon Grated Lemon Peel
  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1 cup Shredded, Unpeeled Zucchini
  • 1 cup Walnuts (optional)
  • 1 cup Powdered Sugar
  • 1-½ Tablespoon Lemon Juice

Preparation

Preheat oven to 375 degrees.

Cream together butter and sugar. Add egg and lemon peel; mix well. Add flour, baking powder, and salt. Incorporate until smooth. Stir in zucchini and nuts.

For frosting, whisk together powdered sugar and lemon juice in a small clean bowl. Set aside.

Drop cookie dough onto a greased cookie sheet in tablespoon-sized balls. Bake for 10 minutes, or until very lightly golden. Frost while still warm.

Cool on a wire rack. Enjoy the yummiest cookies ever!

I was out of zucchini, so I made these with ginger and sour cream instead. Delish. I can’t wait to try them out with zucchini!

If you like lemon, these are great! I needed to use up a zucchini, and this worked perfectly. They aren’t overly sweet, but very moist & satisfying. I will definitely make this recipe again!
