Description

A light and refreshing cookie. It almost tastes like Spring!

Ingredients

  • ¾ cups Butter, Softened
  • 1 cup Sugar
  • 2 Tablespoons Corn Syrup
  • 2 teaspoons Lemon Extract (use 3 Teaspoons For A Really Strong Lemon Flavor)
  • 1 whole Egg
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder

Preparation

Cream together butter and sugar until fluffy. Beat in corn syrup, lemon extract, and egg. Stir in flour, baking soda and baking powder. Cover and put in the fridge for at least an hour.

Preheat oven to 325°. Line cookie sheet with parchment paper (it can also work with a non stick cookie sheet. I don’t always have parchment paper on hand).

Roll dough into balls and place on a cookie sheet. If dough gets too sticky, place it back in fridge to chill.

I made 48 smaller cookies from one batch. It’s up to you for the size of cookies you want.

Bake for 11-12 minutes.

**Optional**
When dough is in balls, roll through white sugar before placing on cookie sheet.

Delicious cookies!
I’ve made them twice and have several requests to make them again.
The 2nd batch I made I went with 2 1/2 tsp of lemon extract and to me it was just right!
