Description

Mini shortbread bite filled with a lemon curd blend.

Ingredients

  • 10 Tablespoons Butter
  • 1-⅓ cup Flour
  • ¾ cups Powdered Sugar
  • ½ cups Cornstarch
  • 1 teaspoon Vanilla Extract
  • ½ cups Lemon Curd
  • ¼ cups Cream Cheese
  • 1 whole Lemon, Zested

Preparation

1. Preheat oven to 350 degrees.
2. Cream your butter in your food processor bowl.
3. Combine flour, powdered sugar, and cornstarch in a sifter and sift into a food processor bowl.
4. Pulse two to three times and add vanilla.
5. Pulse until ingredients are mixed. Mixture might look dry at this point. If you can pinch the dough and it sticks together, that’s good. If it’s too dry to stick together, add 2 more tablespoons of softened butter to your dough and pulse until thoroughly mixed.
6. Make 24 dough balls in your hand and press them into a greased mini muffin pan.
7. Bake for 10 to 15 minutes or until the edges of your bites turn golden.
8. Let stand for about 2 – 3 minutes. Then press the end of a wooden spoon gently in the middle of each shortcake bite, making an indention. Don’t press down hard or all the way because it’ll crack your shortcake bite.
9. Let stand for about 5 more minutes, then gently remove each shortcake bite to a cooling rack.
10. Cream lemon curd, softened cream cheese, and lemon zest together and fill cooled shortbread bites. Top with a berry and enjoy!
