Description

This delicious cake is simple to make and full of flavor.

Ingredients

  • 1-½ cup Whole Milk Ricotta
  • 4  Eggs, Separated
  • 2 Tablespoons All-purpose Flour
  • 2 whole Lemons, Juiced
  • 1 cup (scant) Sugar
  • ½ cups (scant) Butter
  • 12 Graham Crackers, Crushed

Preparation

Preheat oven to 350ºF.

Place the ricotta in a bowl and mix in the egg yolks, flour, lemon juice, and sugar.

In a separate bowl, whisk the egg whites until they are stiff and fold into the ricotta mixture.

Melt the butter over low heat and add to the graham crackers. Spoon the cracker mixture into a 10-inch springform pan and press it down using the back of a spoon. Pour the ricotta mixture over the base and bake for 55 minutes.
