Low in sugar and filled with healthy fats without sacrificing the flavor.
Preheat oven to 350 F.
Combine crust ingredients in a bowl. Mix until the ingredients hold together. If needed, add additional tablespoons of grapeseed oil one at a time until all dry ingredients are mixed in.
Grease the bottom of a 9×13 pan with a little grapeseed oil. Press mixture onto the bottom of the pan so it covers it. Bake for 15 minutes. When done remove it from the oven but keep the oven on.
Blend eggs, honey, whole wheat flour flour and salt in a mixing bowl. Then fold in the chopped rhubarb and lemon juice.
Spread filling over crust and bake for another 45 minutes.
