Description

Funny name, amazing dessert. Think of it as a combination of clotted cream and lemon curd. Utterly delish, and so very simple to prepare. Only 3 ingredients! (FYI: Posset sounds like faucet.)

Ingredients

  • 2 cups Heavy Cream
  • ⅔ cups Granulated Sugar
  • 2 whole Lemons, Juiced (4-5 Tablespoons)

Preparation

In a heavy-bottomed 2 or 3-quart saucepan, boil the cream and sugar together for 5 minutes, stirring occasionally to make sure sugar dissolves. Remove from heat and stir in fresh lemon juice.

Use a sieve to strain the mixture into a glass measuring cup with a pour spout and allow to cool for a few minutes. Carefully pour mixture into 4-ounce dessert dishes; chill for at least 2 hours. Garnish just before serving. (Garnish options include fresh berries, lemon zest, whipped cream, ginger snaps, etc.)
