Description

This cake WILL change your life. It’s fresh and lemony, with the creamy moistness of a Tres Leches Cake. It’s amazing!

Ingredients

  • 1 box (18.25 Oz. Box) Duncan Hines Lemon Cake Mix Prepared
  • 3 whole Eggs, Or As Directed On Cake Mix Box
  • ⅓ cups Oil, Or As Directed On Cake Mix Box
  • 1-⅓ cup Water, Or As Directed On Cake Mix Box
  • ¾ cups Duncan Hines Lemon Frosting
  • 3 Tablespoons Sugar
  • 2 pints Heavy Whipping Cream, Divided
  • 1 can (12 Oz. Can) Evaporated Milk
  • 1 can (14 Oz. Can) Sweetened Condensed Milk

Preparation

Prepare cake according to box directions, using the eggs, oil, and water. Set aside to cool.

Flip the cooled cake out onto a serving platter. The platter should preferably have turned up edges to help trap liquid.

Using a fork, make multiple punctures all over the surface of the cake, including along the tops of the edges.

Mix the evaporated milk, sweetened condensed milk, and 1/4 cup heavy whipping cream in a pitcher or measuring cup with a pouring spout.

Pour entire contents of milk and cream mixture evenly over the surface of the cake, making sure to soak the edges as well as the center. Set the cake in the fridge to chill and set.

Prepare whipped topping by mixing the remainder of the heavy whipping cream (1 and 3/4 pints) with the sugar and lemon frosting. Whip in a stand mixer on low/medium speed for 2 minutes until thick. Switch speed setting to high and whip until light and fluffy.

Spread whipped lemon topping on the cake and serve immediately or set in the fridge to chill. Garnish with halved lemon slices.

Wow, this cake was fabulous and easy to make. Brought it to Easter dinner and people were fighting over who got to take left overs. My husband, who rarely cares for my cakes was so disappointed when we got home and all that was left for him was a small slice. Would make again to take somewhere in a heartbeat.

We didn’t like it at all!
It was sticky sweet, soggy (WAY soggy even for a tres leches type of cake,) artificial tasting and even the kids, who usually eat anything that vaguely resembles cake didn’t like this one. Maybe we had an issue because we are just not used to packaged cake and icing flavors ?!
And yes, we also had way too much icing, as well as soaking liquid. The cake was never really able to absorb it all.

Yum this cake is awesome! I would recommend halfing the frosting it makes way too much (or you could just eat the rest!) Also after I poured the milk mixture over the cake a lot of it did not soak in. I drained it off into a measuring cup and just kept repouring until it was all absorbed. I also used a larger fork rather than a dinner fork. I have made this several times and everybody loves it!
