Description

Easy to make and incredibly tasty cookies with crispy edges and a soft center.

Ingredients

  • 2-¾ cups Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • 1 pinch Salt
  • 1 cup Butter, Softened
  • 1-½ cup White Sugar, Plus 1/2 Cup For Rolling
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Fresh Lemon Juice
  • 2 Tablespoons Grated Lemon Zest

Preparation

Preheat oven to 350°F (180°C).

In a small bowl, mix together flour, baking soda, baking powder and salt. Set aside.

Using a mixer, beat together the butter and 1 1/2 cups sugar until smooth and very fluffy. Beat in egg, vanilla extract, lemon juice and lemon zest. Gradually blend in the dry ingredients.

Roll rounded teaspoonfuls of dough into balls, and roll in remaining sugar. Place on cookie sheets lined with parchment paper, about 1 1/2 inches apart. Bake about 8 minutes in the preheated oven, or until edges start getting lightly brown. Let to cool on wire racks.
