Description

A lightly flavored biscotti, perfect with a cup of green tea.

Ingredients

  • 1 cup Butter, Softened
  • 1 cup Sugar
  • 3 whole Eggs
  • 2 whole Lemons, Zested
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 teaspoon Ground Clove
  • 1 teaspoon Cinnamon

Preparation

Preheat oven to 350 degrees.

Beat butter for 2 minutes. Add sugar and beat till light and fluffy. Add eggs one at a time, scraping the bowl in between. Beat well. Add lemon zest.

Combine the flour, baking powder, salt, cinnamon and clove. Add to the creamed mixture.

Form into a 1 1/2-inch thick, 3-inch wide flattened log (you may need to do 2 logs depending on the size of your cookie sheet). Place on a greased cookie sheet. Bake for 35 minutes, or until set in the middle. Cool for 15 minutes. Cut on the bias 1-inch thick. Bake for another 15 minutes.

You may drizzle or dunk this in white chocolate and sprinkle with sugared lemon rind. You may also want to adjust the lemon and clove amounts depending on your palate.

I love cloves, and couldn’t wait to try these. They were excellent; the cloves give them a nice little twist. My husband loved them with his morning coffee.
