Description

Creamy lemon cheesecake filling with sweet, juicy blueberries and a graham cracker crust.

Ingredients

  • FOR THE CRUST:
  • 2 cups Graham Cracker Crumbs
  • 3 Tablespoons Sugar
  • 8 Tablespoons Unsalted Butter, melted
  • _____
  • FOR THE CHEESECAKE FILLING:
  • 16 ounces, weight Cream Cheese, At Room Temperature
  • ½ cups Sour Cream
  • ¾ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 2 teaspoons Lemon Zest
  • 2 Tablespoons Lemon Juice
  • 1 pint Fresh Blueberries

Preparation

Preheat the oven to 325˚ F. Line a 9 x 13-inch pan with foil. Lightly grease the foil. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Toss with a fork until well blended and all the crumbs are moistened. Press the mixture evenly into the bottom of the prepared pan. Bake for 8-10 minutes, until lightly browned. Transfer to a wire rack to cool and maintain the oven temperature while you prepare the filling.

In the bowl of an electric mixer, combine the cream cheese and sour cream. Beat on medium speed until smooth. Add in the sugar and beat on medium-high speed until light and fluffy, 1-2 minutes. Beat in the eggs one at a time, mixing well after each addition. Blend in the vanilla extract, salt, lemon zest and lemon juice. Fold in the blueberries gently with a spatula until evenly incorporated. Pour the mixture over the graham cracker crust and gently spread into an even layer with an offset spatula.

Bake for 35 minutes or until just set and the center no longer jiggles when the pan is tapped. Transfer to a cooling rack and let cool to room temperature. Cover and refrigerate for at least 4 hours before slicing and serving.

This was easy and delicious. I only had frozen blueberries and I defrosted them on the counter before adding them. I had to cook it about 10 minutes more than the recipe states, maybe because the blueberries were still pretty cold?

Everyone keeps going back to the refrigerator for “one more bite” so I will definitely make this again. Thanks for sharing this recipe!

Oh my goodness, God bless you! I had soemthing like this at a baby shower and it was fantastic! They drizzled the top with a lemon confectioner’s sugar glaze too! Delish!

I made these last week, they were good. I didn’t have any blueberries, so next time I will try with blueberries. I cut down on the sugar also. I agree with one review, needs more cheesecake. Definately will make again.

These bars were a big hit last night and I doubt they will last long. I didn’t foil the pan but greased it well and it worked great. Also, I subbed plain greek yogurt for the sour cream with no issues.

Very very yummy, I did mess with it a little. Instead of sour cream I used non-fat plain greek yogurt. I also used 1/3 less fat cream cheese. The results were great, but the bars fell apart pretty easy (from lack of fat I’m guessing). Make sure you spray that pan good, these puppies will stick!

This turned out soooo good! It was easy, just followed the recipe to the best to my ability. Turned out very good! My Mother in Law said the recipe is a definite keeper! The only thing she asked is whether it should be more like a cheeseCAKE instead of bars. So I might try that. But I like them as bars. So we will see. I might not line the pan next time…only because I dislike dealing with Foil! Ha! Otherwise I loved it! perfect amount of lemon!
