Lemon Bars. A perfect spring dessert.
Prepare an 8-inch square baking pan. Preheat oven to 350ºF.
Mix crust ingredients until just combined. Press down in the prepared pan and bake for 20 minutes until just golden brown.
In a blender, place the lemon segments of one lemon. Cut the second lemon in half and remove all the seeds. In a blender, squeeze in the lemon juice and zest of the lemon. Now add sugar, eggs, cornstarch and salt to the blender. Blend until just barely smooth.
Remove crust from the oven and reduce heat to 300ºF. Pour the lemon batter over the crust. Bake for 20 minutes.
Remove and let cool. Dust powdered sugar over the cooled bars.
