Zest and juice lemon into a small bowl, add the lavender and let sit for 4 hours in the fridge. This will awaken the buds, giving off that delightful taste.
Preheat oven to 350ºF.
In a mixer, cream together sugar and butter. Mix in the vanilla, egg, and lemon mixture. Stir in dry ingredients, except for the powdered sugar, until combined. Roll dough into a balls and place on a cookie sheet.
Bake for 10 minutes or until edges start to barely brown. Remove from oven and let cool on cookie sheet for 2-3 minutes, then move to a cooling rack. Using a mesh strainer dust cookies with powdered sugar.
