Description

Kiwi and Raspberry Chia Pudding is naturally sweet and creamy. Make it ahead and keep it in the fridge for a quick and healthy snack anytime.

Ingredients

  • FOR THE CHIA LAYER:
  • ½ cups Chia Seeds
  • 1-½ cup Coconut Milk
  • FOR THE PINK LAYER:
  • 1 cup Frozen Raspberries
  • ¼ cups Coconut Milk
  • 1  Banana
  • FOR THE GREEN LAYER:
  • 1  Banana
  • 1 cup Spinach
  • 2  Kiwis
  • 2 Tablespoons Coconut Milk
  • 3 cubes Ice (or More)

Preparation

First, stir chia seeds and coconut milk. Place in fridge for at least 2 hours to set. When set, proceed with recipe.

Place chia pudding layer in the bottom of glasses. For pink layer, mix all ingredients in a high-powered blender. You want the mixture to be thick so the colors don’t run together when you layer them in your glass. Gently pour the pink layer over top of chia layer.

For green layer, mix all ingredients in a high-powered blender. Gently pour green layer on top of the pink layer.

Top with sliced fruit. This makes 2 big servings or 4 small servings. If you need more sweetness, add 1 tablespoon maple syrup to one of the layers.
