Description

Surfing animals for my little boy’s birthday! This cake is healthy and low in fat and sugar, but still sweet and creamy. Definitely something you want to give to your kids rather than a store-bought cake!

Ingredients

  • FOR THE CAKE:
  • 3 cups All-purpose Flour
  • ¼ cups Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 pinch Salt
  • 1-½ cup Diet Fanta
  • FOR THE TOPPINGS:
  • ⅔ cups Sugar Free Strawberry Jam
  • ½ cups Heavy Cream
  • 1 box (3.4 Ounce Size) Vanilla Pudding Mix, Fat And Sugar Free
  • 1 cup Fat Free Milk
  • 15 drops Blue Food Coloring
  • 40 pieces Animal Cracker

Preparation

For the cake:
Preheat your oven to 350°F. Layer a 9-inch baking pan with parchment paper.

In a large bowl combine flour, sugar, baking powder, baking soda and salt. Add Fanta and stir until smooth. Transfer batter into the baking pan.

Bake for 35-40 minutes (until a stick inserted into the cake comes out clean). Remove it from the oven and let cake cool for a few minutes.

For the toppings:
Put the sugar free jam into a microwave safe bowl and microwave on high for 30 seconds. Then stir and spread it over the warm cake. Place cake in fridge until completely cooled.

Put heavy cream into a bowl and use a mixer to beat it until stiff peaks form. Set aside.

Prepare pudding mix in a medium-sized bowl but instead of the instructions on the box use only one cup of fat free milk. Add stiff heavy cream to the pudding. Add food coloring (until it’s as blue as you want it) and stir until well combined.

Spread over cake (kinda messy, so that it looks like waves). Right before serving stick some animal crackers on top.
