Description

Deliciously refreshing Key Lime Pie with towering walls of graham cracker crust.

Ingredients

  • 2 cups Graham Cracker Crumbs
  • ¼ cups Firmly Packed Brown Sugar
  • ½ cups Butter, Melted
  • 1 cup Shredded Coconut
  • 2 cans (14 Oz. Size) Condensed Milk
  • 4 whole Egg Yolks
  • 1 cup Lime Juice (4-5 Limes)
  • ¼ cups Fat Free Creamer, Or Heavy Cream
  • Zest From 2 To 3 Limes
  • 2 Tablespoons Sugar

Preparation

Preheat oven to 350 degrees F.

In a medium bowl, combine graham cracker crumbs and brown sugar. Stir in melted butter. Add coconut and mix. Press the mixture firmly into the bottom and up the sides of a 10-inch spring form pan. Bake for 8 minutes and let the crust cool completely before spreading the pie filling over it.

Turn oven down to 325 degrees F.

In a large bowl, with an electric mixer at medium speed, beat together the condensed milk, egg yolks, lime juice, cream and zest until blended. Add in the sugar and continue mixing.

Once it is fully combined, carefully pour the filling into the cooled pie crust. Return the baking pan to the oven and bake for about 30-35 minutes. Remove from oven and let cool slightly, then transfer to the fridge to cool for at least 4 hours or longer.

My husband loves key lime pie too. When we were first dating, I made him one. I was so proud. He took one bite and had to spit it out. He said, “I’m so sorry, I can’t eat this.” I must have screwed something up, because it tasted terrible. Hopefully I can master this recipe!

Looks delicious! I have about 10 limes I need to use! This sounds perfect! Plus my husband is one of the biggest fans of key lime pie.

This was excellent! I too used sour cream since that’s what I had. I did add a bit more sugar since I like things on the sweeter side. I’ll definitely make this again! Thanks so much for sharing.

I made this for my husband’s b-day and he, we, LOVED it! It took about 20 key limes, used fat free condensed milk and didn’t have cream so I used sour cream, but it still turned out so creamy and yummy! The coconut in the crust was awesome! I could have eaten the crust by itself! You might consider mentioning Coconut Crust in the name of the recipe.

Will definitely make this again!

This was a great dessert! I made a few changes – I don’t know if it’s just me or not, but I couldn’t find the same size condensed milk here in Canada, so I used the only size I could find which is 300 mls. I actually only used one and a half tins – because I used the other half of the tin for a different dessert. This doesn’t even come close to the 2 x 14 ozs. I didn’t adjust the amount of lime juice or cream to compensate and it still came out delicious. The crust is great too – love the coconut. All around it was just yummy. Thanks.
