Description

This is the simplest strawberry cake recipe, made with lemon zest. Take this to your next brunch or enjoy a slice with coffee.

Ingredients

  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Cinnamon
  • 1 pinch Kosher Salt
  • 1 whole Lemon, Zested
  • ¾ cups Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • ½ cups Canola Oil
  • 1-½ cup Strawberries, Sliced (can Go Up To 2 Cups)
  • 1 Tablespoon Raw Sugar

Preparation

Preheat oven to 350F. Butter and flour an 8-inch cake pan.

In a large bowl, combine the flour, baking powder, cinnamon, pinch of salt and lemon zest. Trust me, the cinnamon makes a difference.

Add in the sugar, eggs, vanilla and oil and mix to combine.

Pour batter into cake pan and because it’ll be thick, smooth out the top with a spatula.

Drop in the strawberries, pressing them into the batter. Sprinkle the top of the cake with raw sugar.

Bake for 50-60 minutes or until a cake tester inserted comes out clean.
