Description

A former coworker, Joy, shared her Mom’s Apple Cake recipe with me a few years ago and now I am sharing it with you. I named it Joyful Apple Cake because, well it was Joy that shared it with me and I really am filled with joy when I eat it!

Ingredients

  • ½ cups Canola Oil
  • 2 whole Large Eggs, Lightly Beaten
  • 2 teaspoons Vanilla Extract
  • 2 cups Granulated Sugar
  • 2 cups All-purpose Flour
  • 4 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 4 cups Apples, Red Delicious, Peeled And Cut Into Bite Size Pieces
  • ½ cups Pecan Pieces

Preparation

Preheat your oven to 350 degrees F.

1) Grease with shortening and lightly flour a bundt or large loaf pan.

2) Mix the first three ingredients together in a large bowl.

3) Mix the next five (dry) ingredients together in a separate bowl.

4) Pour the dry ingredients into the wet ingredients and stir well to combine, then add apples (Red Delicious really are best for this recipe) and nuts and mix well.

Note: the batter will be VERY stiff and you may wonder if you or I have left out an ingredient or two. Fear not, you are right on track, the batter is very stiff and will loosen up with the juices of the apples as they cook. TRUST ME… Just get yourself a big ol’ wooden spoon and use some of that pent up aggression to stir and chop up those apples a bit while incorporating them into the batter. You’ll feel better since you worked out some and you’ll feel better about eating the cake when it’s done, since you’ll have burned some calories.

5) Spread the still STIFF batter into your prepared bundt or loaf pan.

6) Bake 1 hour.

7) Cool for 15 minutes before flipping out onto a plate then cool an additional 15-30 minutes before serving.

Enjoy!
