Description

These are a holiday favorite from my childhood. They are great any time of year!

Ingredients

  • ¾ cups Butter Or Margarine
  • 3 ounces, weight Jello (not Sugar Free), Any Flavor
  • 1-¼ cup Sugar, Divided
  • 2  Eggs
  • 1 teaspoon Vanilla
  • 2-½ cups Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt

Preparation

Mix butter, Jello, 1/2 cup sugar, eggs, and vanilla until creamy. Stir in flour, baking powder, and salt until combined.

Shape into 1″ balls. Roll the balls in the remaining sugar and place on a parchment-lined cookie sheet. Flatten with the bottom of a glass or use a cookie stamp. Dip the glass in the extra sugar if it gets sticky.

Bake at 400ºF for 6-8 minutes, or until just golden at the edges. Cool and enjoy!

Makes 4 dozen.

These cookies freeze really well.

These were cookies that my Mom made every Christmas. I was nostalgic and wanted to make them this year. They were so easy to make and made 48 cookies in each batch. I did one batch with lime and one with cherry jello. I actually like the raspberry better than the cherry but then there weren’t many left of either flavor so I would consider them a hit. There are a few real tricks to these cookies: 1. line your pan with parchment 2. use a small scoop for the 1″ roll of dough for a consistent size and 3. use the bottom of a wine glass, dipped in sugar to press out the cookies. They turn out wonderfully crisp and light. Just be careful… you’ll end up eating 6 at each sitting! Thank you so much for the recipe.

FABULOUS recipe! I used raspberry-cranberry jell-o and diced up some dried cranberries and added it to the mix and they were super! Easy to make…. can’t wait to try another flavor! Thx for sharing!!
