Growing up, my grandmother often made these delicious little donut fritters for us on special occasions and holidays. Now, it’s become a tradition for me to make these on Christmas Eve. Of course, they are delicious any time of the year!
1. Sift flour, baking powder, and powdered sugar; add salt.
2. Beat eggs, granulated sugar, vanilla, and nutmeg until well-mixed.
3. Add milk and egg mixture to dry ingredients, beginning and ending with milk.
4. Let batter rest for 10 minutes.
5. In a large Dutch oven, heat oil to 350 degrees.
6. Drop batter by tablespoonfuls into hot oil.
7. Fry until golden brown, turning donuts over as necessary.
8. Drain on paper towels.
9. While warm, roll in powdered sugar.
10. Serve warm.

This sounds like an Italian Beignet.
Maybe what they serve at the Cafe Du Monde is actually Sfinges.
I will give this a try soon. Thanks for the recipe.
