Description

This chocolate dessert called Chocolate Salami comes straight from Italy and is filled with the flavors of chocolate, pistachios, almonds and rum!

Ingredients

  • 7 ounces, weight Dark Chocolate, Chopped
  • 3 ounces, weight Unsalted Butter
  • ½ teaspoons Pure Vanilla Extract
  • ⅓ cups White Sugar
  • 2 Tablespoons Brown Sugar
  • 1  Large Egg
  • 1  Large Egg Yolk
  • 6 ounces, weight Plain Cookies (tea Biscuits, Graham Crackers, Digestive Cookies), Crushed
  • 2 Tablespoons Dark Rum
  • 1 cup Mixed Nuts
  • 2 Tablespoons Powdered Sugar

Preparation

Mix chocolate and butter in a pot and melt it over another pot or saucepan of boiling water. Or use a double boiler if available.

In a bowl, mix vanilla extract, sugar, brown sugar, egg, and egg yolk. Add it to the chocolate and butter mixture and mix. Continue to cook (stirring frequently) until sugar dissolves and it’s smooth. It should take about 5 minutes. Remove from heat.

Add cookies, rum, and nuts into the chocolate mixture and stir well. Let cool.

Take two sheets of parchment paper and divide the chocolate mixture between them. Roll and make two logs. Twist the ends and keep in a fridge overnight.

Remove from fridge, unwrap them, and cover with powdered sugar. Cut into slices and serve.
