Description

What are two of my favorite indulgences? Without a doubt, beer and cake. So it goes without saying that I was happy to make this Guinness Fruit Cake in honor of St. Patrick, the patron saint of Ireland.

Ingredients

  • 3-½ cups All-purpose Flour
  • 2 teaspoons Cinnamon
  • ¾ teaspoons Nutmeg
  • ½ teaspoons Ginger
  • 1-½ teaspoon Baking Soda, Divided
  • 1 cup Margarine
  • 2 cups Raisins
  • 2 Tablespoons Lemon Juice
  • 1 whole Lemon Rind, Grated (1 Lemon Should Yield Approximately 1 Tablespoon)
  • 1-¾ cup Dark Brown Sugar
  • 4 whole Eggs, Beaten
  • ⅔ cups Guinness Beer

Preparation

Heat oven to 325ºF. Grease a 9” springform pan and set it aside.

Mix flour, spices and ¾ teaspoon of the baking soda together in a large bowl. Cut in the margarine with a pastry blender.

Add raisins, lemon juice, lemon rind and sugar. Blend well with a wooden spoon. Get all the lumps of sugar broken down and mixed. Mix eggs in thoroughly.

Measure Guinness into a measuring cup and mix it with the remaining ¾ teaspoon of baking soda. Add Guinness mixture to the cake batter and mix well.

Pour batter into prepared pan and smooth top. Bake for 1 hour at 325ºF then drop oven temperature to 300ºF and bake for 45 more minutes.

Cool completely.
