Description

If you are looking for a rich and decadent chocolate dessert that can be made on a weeknight, this is it! These molten chocolate cakes have a rich and dark flavor with a burst of citrus, and a light, fluffy texture.

Ingredients

  • Cocoa Powder, For Dusting Ramekins
  • 2 ounces, weight Semi-sweet Chocolate
  • ¼ cups Butter, Plus Extra To Grease Ramekins
  • 1 whole Egg
  • 1 whole Egg Yolk
  • ⅛ cups Sugar
  • 1 whole Orange, Zested
  • 1 teaspoon Flour

Preparation

Preheat oven to 450°F. Grease two 4-ounce ramekins and dust with cocoa powder; set aside.

In a double boiler, heat chocolate and 1/4 cup butter until melted. Meanwhile, combine egg, yolk, sugar and orange zest in an electric mixer and beat until light and thick (about the consistency of whipped cream). Slowly stir in the chocolate mixture. Add flour and stir to incorporate. Split evenly between the ramekins, place on a baking sheet and bake for 7–10 minutes, or until edges are set and middle is soft. Let rest for 5 minutes. Run a butter knife along the edge and invert onto a plate.

Fantastic – I LOVE you for making this recipe! I needed a good chocolate fix and this was just the thing :-) I left out the orange (no oranges in the fridge) and found I had to beat the eggs for about 4 minutes to get the consistency right, but otherwise no issues. Thanks!
