Description

A yummy cake that is sorta like a tropical banana bread with cream cheese frosting. It has been a family favorite longer than I have been alive.

Ingredients

  • FOR THE CAKE:
  • 3 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • 2 cups Sugar
  • 2 cups Diced Bananas
  • 1-½ cup Vegetable Oil
  • 8 ounces, fluid Can Crushed Pineapple, Undrained
  • 3 whole Eggs
  • 1-½ teaspoon Vanilla
  • 2 cups Chopped Pecans

  • FOR THE CREAM CHEESE FROSTING:
  • 1 stick Butter, Room Temperature
  • 1 block (8 Oz. Block) Cream Cheese, Softened
  • 1 pound Powdered Sugar
  • 1 teaspoon Vanilla

Preparation

In a large bowl, combine all of the cake ingredients. Do not use an electric mixer! Simply stir ingredients with a wooden spoon until well-blended.

Pour batter into a well-greased and floured tube pan. Bake at 325 degrees F for 1 hour and 20 minutes. Let cake cool for 10 minutes. Then remove from the pan. Let cake thoroughly cool on a baking rack before you attempt to frost the cake.

Frost with cream cheese frosting.

For the cream cheese frosting, combine butter and cream cheese in a large mixing bowl. Beat until fluffy using an electric mixer. While still blending, add powdered sugar a little at a time until well incorporated. Add the vanilla. Beat until well blended. Spread the frosting over the totally cooled cake. Eat any leftovers with a big wooden spoon.

Garnish frosted cake with additional pecans, if desired.
