Description

My grandmother made this cake for me whenever I requested it. It is a wonderfully flavored version of a sponge cake.

Ingredients

  • 6 whole Eggs
  • 3 cups Sugar
  • 3 cups Flour
  • 1-½ teaspoon Baking Powder
  • 1 teaspoon Vanilla
  • 1-½ cup Milk
  • 3 Tablespoons Margarine

Preparation

In a large bowl, beat eggs until lemon colored. Add the sugar and beat for an additional 5 minutes. Add the flour, baking powder and vanilla and mix thoroughly.

In a small saucepan, heat the milk and margarine until hot, but do not boil. Add to the batter and mix thoroughly, but avoid over-mixing.

Pour into a greased and floured tube pan. Bake at 350 degrees for approximately 1 hour or until a tester comes out clean. Invert onto a cooling rack and allow to cool before cutting.

I concur – I made 5 mini sponge cakes in my mini springform pans and they turned out perfectly. Light and airy. I then split them, spread with peach juice and peach jam. Then made some home-made whipped cream and topped the cakes with whipped cream and peach slices. OMG – perfect. Thx for sharing!!
