Looking for a cute Valentine’s Day treat? Nothing says “I Love You” better than homemade (healthy) Oreos.
This is a sweet cookie. A good, sweet, giant, cream-filled cookie. Yet, if you think of an actual Oreo, it is actually on the slightly bitter side. But it pairs perfectly with the super-sweet, creamy filling.
For the cookies (makes 14 assembled cookies):
Preheat oven to 375 F and line a baking sheet with parchment paper. Set aside.
In a large bowl, combine the flours, cocoa powder, baking soda, baking powder and salt. Mix well.
Add sugar, molasses and butter. Using a whisk, stir together until all is combined.
In a small bowl, whisk together the egg and vanilla. Add this into the dough and beat to combine.
Pinch off pieces of the dough and roll into balls using your hands. Then flatten the balls with your hands to make a cookie shape. Place cookies onto the prepared baking sheet 1-2 inches apart (they will expand a lot) and bake for 7-8 minutes. Once cookies are done, remove them from the oven and let them cool for a minute or two on the pan. Then move them from the pan to a wire rack while you make the filling.
For the filling:
Into a large bowl, add cream cheese, Greek yogurt, vanilla and sugar and mix until well incorporated, about 1-2 minutes.
Once cookies are cooled, spread the filling onto the bottom of one cookie (use about one tablespoon of filling). Then place another cookie on top to form a sandwich.
